CRESCENTINE

Please note that this is not pizza fritta! Instead, it’s a delightful appetiser typical of Emilia Romagna. Known as Crescentine, this traditional fried dough originates from Bologna. You can find variations of this dish, each with different names, all along the Via Emilia. Every family in Bologna has its own unique recipe for Crescentine. They are often served topped with cheese, prosciutto, or mortadella, making them a versatile and savoruy treat.

Crescentine pair exceptionally well with Pignoletto, a sparkling wine characterised by its gentle, bubbly froth. Pignoletto is a lesser-known grape variety that is cultivated in the Emilia-Romagna region of northern Italy. This combination of Crescentine and Pignoletto creates a harmonious blend of flavours that highlights the rich culinary traditions of the region.
